Traditional Monk Fruit Water Decoction
Our Monk Fruit is prepared as a traditional water-based decoction, following the centuries-old method used in China.
Whole Monk Fruits are gently simmered in water before the decoction is carefully dried. Unlike highly concentrated Monk Fruit extracts that focus primarily on selected sweet compounds, this traditional preparation offers the fruit's naturally rich and characteristic aromatic profile.
In China, where the fruit is known as Luo Han Guo, this preparation has long been referred to as Monk Fruit Decoction

Recommended Use
Just a tiny pinch—the tip of a knife—is enough to perfectly enhance the flavor of a bowl of muesli, yogurt or quark, without any added sugar. Monk Fruit Decoction has its own unique aromatic profile with a naturally sweet note and is ideal for refining coffee, tea, beverages and desserts. The water-based Monk Fruit extract is heat stable up to 200°C (392°F), making it perfectly suitable for enhancing the flavor of cakes, cookies and desserts of all kinds.
Note: Please keep in mind that without added sugar, the surface of baked goods cannot caramelize. Perhaps allulose could help? We always enjoy receiving your Monk Fruit recipes to share with the keto community.
Personally, we no longer enjoy a bowl of muesli without a pinch of Monk Fruit—especially when it doesn't contain raisins. Wonderfully rounded, with a truly unique flavor you'll simply fall in love with!

Admittedly, the muesli itself still contains too many carbohydrates to qualify as keto.
