Strawberries, plums, pistachios and many fermented foods with intense flavor such as cheese, tofu and wine naturally contain erythritol. It is calorie-free, tooth-friendly and even insulin levels remain unaffected (suitable for diabetics).
All erythritol comes from the fermentation of GMO-free corn starch. Because of its good tolerability, it may be added to foods without any limit on quantities - as long as it is stated "can be a laxative if consumed excessively." Erythritol can also be identified as E968 on the packaging.
The high production price of erythritol has given it, despite its good compatibility, until now a shadowy existence in addition to sugar and xylitol. Despite 10 years in the trade, the expected hype about its special properties has just begun.
